A restaurant called "Sake and Food ko-bo" will open on Sunday, December 7, 2025, inside the long-established inn "Mura no HOTEL Shinoya," located next to the Happo Bus Terminal in Hakuba Village, Nagano Prefecture.
This is the second ko-bo store, following "Snow Country Fermentation Bar ko-bo," which opened in front of Matsumoto Station in June 2025. While the Matsumoto store is a "bar incorporating the wisdom of fermentation," the Hakuba store will open as a "restaurant" focusing on Japanese cuisine that is easy to enjoy even on the go. The aim is to meet the dinner needs of local residents as well as tourists visiting Hakuba in the winter.
The restaurant has 72 seats and an open atmosphere that makes it a great place to drop in after skiing or snowboarding. In addition to main dishes such as sashimi, sushi, tempura, Wagyu steak, Genghis Khan steak, and teriyaki chicken, there is also a wide selection of snacks such as fried gyoza, seared cucumber, Shinshu salmon, and locust tsukudani. For dessert, you can enjoy mochi ice cream and homemade matcha pudding.
The bar offers a wide variety of drinks, including their home-brewed craft beer "HAKUBA CRAFT," as well as local Shinshu sake, wine, and soda made with homemade blueberry syrup, so you can enjoy it not only with dinner but also as a bar.
